Slaw & Date Pitta Bread with Halloumi

Ingredients:

(2 servings)

 

130g Halloumi Cheese, sliced into sticks

2x White pitta breads

60g Plain hummus

Small red cabbage

small red onion

1 Carrot

3 fresh Medjool dates, stones removed

Small bunch of fresh coriander

Juice from an orange

1 tbsp Mayonnaise

1 tbsp Greek Yoghurt

Method:

20 minutes

1. Grate the carrot and onion into a bowl, then shred the red cabbage in too.

2. De-stone the dates then chop into small pieces. Add the chopped dates to the bowl.

3. Finely chop the fresh coriander then add to the bowl.

4. Stir the mayonnaise, Greek yoghurt, and orange juice into the bowl. Set aside.

5. Cut the halloumi into sticks then dry fry until beginning to turn golden.

6. Warm the pitta breads in an oven on a low heat. Once warmed through, remove from the oven, and spread the hummus evenly across both pittas.

7. Divide the date and ‘slaw’ between the two pittas.

8. Finally, lay the freshly fried halloumi sticks across the top and enjoy.
