Ham, Cheese & Date Panini with Smokey Mayo
Ingredients:
(1 serving)
1x Panini
2 tbsp of chipotle mayonnaise
4x slices of Manchego cheese (or similar)
3x thin slices of Parma Ham
2x Medium/Large fresh Medjool dates (chopped into small pieces)
Handful of Rocket salad leaves
Method:
15 minutes
1. Slice the panini in half lengthways. Lay both pieces flat
2. Spread the Chipotle mayonnaise across both slices
3. Sprinkle the chopped Medjool date across the bottom slice. Then lay the cheese slices over the dates.
4. Lay the Parma Ham slices over the cheese
5. Arrange the rocket on top of the cheese and place the top slice of the bread on the top to hold all the other ingredients in place
6. Now place under a grill, or in a panini maker until the cheese begins to melt. Once the cheese has melted, transfer to a serving plate and enjoy whilst still warm.
