Medjool Date & Coffee Energy Balls

Ingredients:

(Makes 10-12)

 

80g milled flaxseed
1 tbsp freshly ground coffee
80g peanut butter
2 tbsp date syrup
2 large Medjool dates, chopped into small pieces
1 tbsp ground almonds (optional)

Method:

20 minutes

 

  1. In a large bowl, combine the flaxseed and ground coffee.
  2. Add the peanut butter and date syrup to the bowl and combine with the flaxseed until you have an even consistency.
  3. Now fold the chopped Medjool date pieces into the mixture.
  4. Finally, use your hands to mould the mixture into 10-12 round balls. Store in a sealed container in a cool, dry place.
  5. Optional –Roll the finished balls in ground almonds if you’d like a little extra flavour and texture.
