1.Gently melt the chocolate in a microwave or over a bowl of warm water (not boiling). Take care not to overheat the chocolate and cause it to burn as this can ruin the flavour. Set aside.
2.Take x2 scoops of vanilla ice cream and place in a small drinking glass or serving bowl.
3.Sprinkle half of the crushed/chopped walnuts over the ice cream along with the chopped Medjool date pieces.
4.Pour the freshly brewed espresso shot into the bowl.
5.Sprinkle the remaining walnuts over the top.
6.Finally, drizzle the smooth melted chocolate over the top and enjoy.
